3.In a medium-sized bowl, combine carrots, cabbage, mint, celery, scallions and soy sauce and mix thoroughly.<br />
4.Spoon equal amounts of vegetable mixture in the center of each wrapper. Fold bottom of wrap half-way over mixture then fold the left and right sides over the folded end, overlapping.<br />
5.Steam wraps in a vegetable steamer for about 5-7 minutes or until heated through then serve immediately.</p>

<li>In a shallow soup bowl, stir together nustard, water  						and honey.</li>
<li>Piece by piece, coat each breast with mustard  						mixture, then crumb mixture, turning several times and  						pressing crumbs into surfaces. As each piece is  						complete, place on prepared rack. Sprinkle lightly with  						2 tablespoons remaining crumbs.</li>
<li>Bake for 20 minutes, or until chicken is crisp and  						juices run clear when it is cut in the middle. Serve  						immediately</li>

<li>In a medium bowl, beat together egg, egg whites, applesauce and  butter; stir in 1 cup milk. Pour egg mixture into flour mixture; stir  well but do not beat.</li>
<li>Coat a 12-inch nonstick skillet or griddle pan with cooking spray;  set over medium heat. Measure out 1/4 cup of pancake batter and drop  onto prepared skillet or pan.  Repeat with remaining ingredients to make  four pancakes at a time. Cook on first side until pancakes are golden  on bottom, about 4 minutes. Flip over and cook on other side until  golden on bottom, about 3 minutes.</li>
<li>Remove pancakes to a preheated oven to keep warm or put on a plate  and cover to keep warm. Repeat with remaining ingredients to make 12  pancakes total. (Batter thickens as it stands. Add part or all of the  remaining 1/4 cup milk to achieve  desired batter consistency.) Yields 2  pancakes and 1 tablespoon syrup per serving.</li>

<div><strong>2 lg. eggplants, sliced  with skin left on (approx. 3 lbs.)<br />
1/2 to 3/4 lb. Kosher skim milk  Mozzarella cheese, sliced<br />
3 c. spaghetti sauce<br />
1/2 tsp. oil, to  grease pan</strong></div>
<div>Salt the  sliced eggplant and let stand for several hours. Rinse and pat dry.  Place slices in single layer under broiler and brown both sides. Layer  the sauce, eggplant, cheese in a greased pan, 3 times, ending with a  little sauce on top. Bake at 350 degrees for 40 to 45 minutes. Freezes  well. Yield: 4 servings at 375 calories each (using 1/2 lb. cheese)</div>
