3/4 cup(s) white all-purpose flour
3/4 cup(s) whole wheat flour
1/2 cup(s) quick cooking rolled oats, do not use instant
1 Tbsp baking powder
1/2 tsp table salt
1/2 tsp ground cinnamon
1/4 cup(s) unpacked light brown sugar
1 large egg(s)
2 large egg white(s)
1/2 cup(s) unsweetened applesauce
2 Tbsp unsalted butter, melted
1 1/4 cup(s) soymilk
2 spray(s) cooking spray
6 Tbsp maple syrup
- In a large bowl, combine both flours. Add oats, baking powder, salt and cinnamon; stir well. Add sugar; stir again.
- In a medium bowl, beat together egg, egg whites, applesauce and butter; stir in 1 cup milk. Pour egg mixture into flour mixture; stir well but do not beat.
- Coat a 12-inch nonstick skillet or griddle pan with cooking spray; set over medium heat. Measure out 1/4 cup of pancake batter and drop onto prepared skillet or pan. Repeat with remaining ingredients to make four pancakes at a time. Cook on first side until pancakes are golden on bottom, about 4 minutes. Flip over and cook on other side until golden on bottom, about 3 minutes.
- Remove pancakes to a preheated oven to keep warm or put on a plate and cover to keep warm. Repeat with remaining ingredients to make 12 pancakes total. (Batter thickens as it stands. Add part or all of the remaining 1/4 cup milk to achieve desired batter consistency.) Yields 2 pancakes and 1 tablespoon syrup per serving.

6 oz. of your favorite pasta (suggestion: bowtie, penne, mostaccioli)
1 cup fresh or frozen (thawed) peas
1 12-ounce can of nonfat evaporated milk
1 tablespoon all-purpose flour
2 tablespoons fresh basil, chopped
1 clove garlic, smashed and minced
1/4 cup shredded Parmesan cheese
2 ounces prosciuitto, chopped
1. Cook pasta according to package instructions, drain, then set aside in a serving bowl.
2. While the pasta is cooking, add about 1/2 cup of water and bring to boil in a medium saucepan. Cook peas for 10 minutes then drain and discard remaining water in saucepan. Return peas to saucepan.
3. In a small bowl whisk together the milk and flour then pour over the peas. Add the basil and garlic then stir to combine. Raise heat to medium and stir until thickened.
4. Add the Parmesan cheese and prosciutto and continue stirring until cheese is melted and mixture is combined then pour over the pasta. Toss pasta until well-coated with the sauce then serve with optional garnishes.

Real Hoodia is expensive to harvest. Therefore, most Hoodia products are really Hoodia Gordonii “extract” or mixed with fillers or several other ingredients. Unlike most Hoodia products, UniqueHoodia is 100% pure Hoodia taken from the CORE of the plant, where the active ingredients are. This is the stuff that works! Eggplant Parmesan is not only low calorie for Mom, it’s a great way to get kids to eat a healthy vegetable! I made this last night, and the whole family loved it.
2 lg. eggplants, sliced with skin left on (approx. 3 lbs.)
1/2 to 3/4 lb. Kosher skim milk Mozzarella cheese, sliced
3 c. spaghetti sauce
1/2 tsp. oil, to grease pan
Salt the sliced eggplant and let stand for several hours. Rinse and pat dry. Place slices in single layer under broiler and brown both sides. Layer the sauce, eggplant, cheese in a greased pan, 3 times, ending with a little sauce on top. Bake at 350 degrees for 40 to 45 minutes. Freezes well. Yield: 4 servings at 375 calories each (using 1/2 lb. cheese)

1 large onion, very finely chopped
1 Tbsp. vegetable oil
1 1/2 cups corn kernels, fresh or frozen
1 pound zucchini, chopped
1, 28 ounce can plum or Roma tomatoes, crushed or chopped
1, 15 ounce kidney or black beans
1 tsp. oregano
Pinch of black pepper
Directions:
1.In a large skillet, sauté the onion in the vegetable oil.
2. Add the corn, zucchini, tomatoes, beans, oregano, and pepper. Toss gently to combine. Cover the skillet, and cook mixture over low heat for 15 minutes, stirring gently a few times.
3. Serve over cooked pasta or rice.

A healthy alternative to cole slaw!
2 large apple(s), 1 red and 1 green, cored, thinly sliced, cut into matchsticks
1 1/2 Tbsp fresh lemon juice, or less to taste
3 cup(s) carrot(s), cut into matchsticks (many stores sell these precut)
1/4 cup(s) chives, chopped
1 Tbsp olive oil
1 tsp sugar
1/2 tsp table salt
1/4 tsp black pepper, or more to taste
2 oz feta cheese, French-variety suggested, crumbled
Place apples in a large bowl and toss with lemon juice. Add carrots, chives, oil, sugar, salt, pepper and cheese; toss to mix thoroughly. Yields about 3/4 cup per serving.
